AUBERGINE DIP
ingredients
75ml olive oil
1 large aubergine
about 400g/14oz
sliced
2 spring onions,
finely chopped
1 large garlic clove,
crushed
2tbsp finely chopped
fresh parsley
salt and pepper
smoked sweet spanish
paprika
to garnish
crusty bread to serve
method
1 heat 4 tablespoons of
the olive oil in a large frying pan over medium-heat, add the
aubergine
slices and cook on
both sides until soft and beginning to brown, remove from the frying
pan and
allow to cool
completely.
2 heat the remaining
oil in the frying pan. Add the spring onions and garlic and cook for
3 minutes,
or until the spring
onions become soft remove from heat take out of pan and allow to cool
3 transfer all these
ingredients to a food processor and process until a coarse pur'ee
forms transfer
to a serving bowl
and stir in the parsley season to taste allow to chill in
refrigerator sprinkle with
paprika and serve
with crusty bread
